Festive Vegan Eggnog

Ingredients

  • 1 cup of macadamia nuts
  • 1 cup of cashews
  • 3 cups of water
  • 1 can of coconut milk
  • 1 1/2 tsp nutmeg
  • 1/4 tsp of cloves
  • 1 tsp of cinnamon
  • 3 tbs of maple syrup
  • Optional: 2 tbs of bourbon

Instructions

  • Soak your macadamia and cashews nuts in water overnight or for an hour
  • Drain the water out, and place your soaked nuts in your blender.
  • Add water, coconut milk, nutmeg, cloves, cinnamon and maple syrup.
  • Blend until well combined.
  • Optional: You can add your splash of bourbon at this point to make your eggnog extra festive. Blend until well combined
  • Serve with your favorite paper holiday straw and some freshly ground nutmeg on top!
