Chickpea Carrot Bowl

Ingredients

  • 3 cups of raw chickpeas soaked overnight
  • 2 cups of water
  • 3 cups of vegetable broth
  • 4 garlic cloves minced
  • 4 bay leaves
  • 2 tbs of olive oil
  • 2 cups of chopped carrots
  • 1 tsp of turmeric
  • 1/2 tsp of ginger powder
  • 1/4 tsp of cumin
  • 1/2 tsp of dried thyme
  • 1 1/2 cups of peas
  • Salt/pepper to taste

Instructions

  • In a hot pan, place chickpeas, water, vegetable broth, garlic, bay leaves, and oil. Cook for approximately 40 minutes or until chickpeas are soft.
  • Add chopped carrots, turmeric, ginger powder, cumin and thyme . Cook for another 10 minutes.
  • 5 minutes before serving, add peas and salt/pepper and stir.
