Does anyone ever crave a delicious homemade red-ish sauce? We definitely do! There is nothing worse than eating pasta with a bland sauce or spending tons of money on store bought sauces. We’ve got you covered with our newest obsession… our Walnut Roasted Red Pepper sauce. Packed with flavor, this easy to make sauce will soon become your BFF.
This recipe calls for roasted red peppers, which brings so much yumminess! Since it was raining, we didn’t have the opportunity to actually put them on the grill. However, we did carefully roast them over our gas stove, which is the best alternative if you don’t have access to an outside grill. It still brings just as much flavor (trust us)!
As if the roasted flavors weren’t enough, we added walnuts to the mix in order to include a crunchy grounding element to the dish. It really mimics traditional non-vegan pasta dishes in terms of texture as well. Between the walnuts and the red peppers, you simply cannot go wrong with this recipe! It was also our first time trying chickpea pasta and we have to say that we definitely recommend it! It’s even gluten free, which makes it easier to digest, but the best part is that it doesn’t fall apart.

Walnut Roasted Red Pepper Pasta
- 8 oz pasta of choice
- 3 red peppers roasted
- 1/4 cup of olive oil
- 2 garlic cloves
- 1/4 cup of nutritional yeast
- 1/3 cup of pasta water
- 1/2 cup of veggie broth
- Salt/pepper to taste
- 1 1/2 cups of walnuts
- Cook the pasta of your choice (8 oz).
- In a blender, add your roasted red peppers, olive oil, garlic cloves, nutritional yeast, veggie broth, salt/pepper and some of your pasta water.
- Blend until smooth.
- Add your walnuts to the blender. Pulse gently until the walnuts are roughly broken down.
- Pour over cooked pasta and enjoy 🙂
