Happy Cinco de Mayo! This is our take on celebrating traditional Mexican ingredients! Instead of doing the usual taco or guacamole recipe, we were inspired to be creative by one of the most iconic Mexican ingredients: corn! And letโs be honest, who doesnโt like crunchy fritters with an amazing dipping sauce?!
Although we are posting this on Cinco de Mayo, this recipe is great for the spring, summer, and even the fall. Such seasons are great for sourcing locally grown produce. We are lucky enough to live close to a few farmers markets, where we picked up locally grown corn. It is so important to us to support local farmers, and have the most organic ingredients we can find.
A part of being vegan is to be more socially aware of environmental issues, and how our own actions impact the World. Spicy Corn Fritters w/ an Avocado Basil Dip
Ingredients
Corn Fritters:
- 2 cups of corn
- 1 cup of green onions roughly chopped
- 1 cup of corn meal
- 1/2 cup of flour
- 1/2 tsp of baking powder
- 1/2 tsp of garlic powder
- 1/4 tsp of cumin
- 1/4 tsp of cayenne
- Salt/pepper
- Optional: cooking oil for frying
Avocado Basil Dip:
- 1 avocado
- 6 basil leaves medium size
- Juice of 1/2 lime
- 6 tbs of water
- 1 tbs of olive oil
- Salt/pepper to taste
Instructions
Corn Fritters:
- In a food processor, add green onion and 1 cup of corn. Make sure you process until smooth. We recommend using non-frozen corn to maximize flavors.
- To the food processor mixture, add last 1 cup of corn and corn meal. Pulse to roughly mix.
- Place mixture in a mixing bowl. Add flour, baking powder and spices. Mix with spatula.
- Fry with preferred cooking oil for 5 minutes on each side on medium-low heat or until golden brown. Feel free to also try baking them for an oil free alternative!
- Enjoy ๐
Avocado Basil Dip:
- Place all ingredients in a food processor. The olive oil is optional, for those who desire an oil-free dip! ๐
- Pulse until creamy and delicious.
- Tip: Use more water to achieve a thinner consistency.
